Fascinating. Two or those three are definitely healthy and an important part of the diet. I wonder where their belief that a healthy bowel was bad came from.
Food in Iraq 1500 years ago would be subject to more contamination than that grown in Europe or North America today. Hence refined or cooked food may have been a safety issue.
Well we have to remember: they all drank wine because, not knowing what microbes were, all they knew was that raw water caused illness and alcohol didn't. They probably picked up parasites from the vegetables too.
